One of the only true wild meats available in the United States our wild boar baby back ribs are sourced from small ranches outside San Antonio Texas where the pigs are feral and allowed to roam free. The animals graze on a diet of wild nuts fruits and roots which gives the meat the deliciously sweet and nutty flavor we love until they re humanely trapped and transported for slaughter – never hunted. These wild pork ribs are never given antibiotics hormones or steroids. Like pork which is only darker and leaner wild boar meat is sweet and slightly nutty and pairs well with many flavors. Their natural diet includes nuts fruits roots and tubers creating a unique flavor profile different from domestic pork. Baby back ribs are cut from the top of the rib cage near the backbone. Spare ribs are cut from the bottom of the rib cage. The farther down the rib cage you go the meatier the ribs become. That is why spare ribs take longer to cook.
